Holiday Finger Food: How to Utilize Christmas Leftovers into New Year’s Eve Appetizers
What kinds of bite-sized appetizers can I prepare for New Year’s Eve using my Christmas remaining food that will still impress guests?
Party snacks needn't be elaborate, so New Year's presents a perfect opportunity to clear the decks. The key rule is to stick to items to just one bite—no one wants to handle a fork. People just want a comforting taste of hearty fare with a luxurious touch.
Should you possess a bit of smoked salmon left, place it on mini pancakes and top it with lumpfish caviar. Mini fishcakes are also an ideal choice: If you have leftover smoked haddock or hot smoked salmon, mix it through mashed potato, blend with fresh herbs, citrus, and caramelized onions, then roll in panko and deep-fry.
You could also have a ball with croquetas. Make the bechamel a few days ahead, then use remaining pork, chicken, or mushrooms for the interior. Whizz old bread into breadcrumbs to coat them, then fry. Savoury pastry mixtures are another perfect use for those breadcrumbs, or use them as a coating for bite-sized chicken. Seasoning-wise, just add a bit of citrus zest and aromatic herbs, and they'll taste so much more. As an aside, buttery pastries make excellent coatings, too.
One beloved treat at this time of year is a post-holiday sandwich, and that doesn't have to stop after Boxing Day. Place some holiday meats in an sealed tub and freeze. While you're at it, reserve some cranberry sauce and honey ham glaze in the refrigerator. When needed, defrost the meat, then place it in a preheated oven with the reserved glaze for a short time. Cool and slice thinly, then lay on top of some artisan bread and start building mini sandwiches with lots of cranberry sauce. Slice into small squares for a surefire hit.
Remaining poultry, meanwhile, could be transformed into a spicy, crisp salad. There’s always a bit of dark meat left over, and it's perfect for something punchy. Pull the meat, then crisp it slowly in a pan, and toss with leftover cranberry sauce thinned with lime juice, a spoonful of soy sauce and a little chilli oil. Finish with fresh herbs and some sliced spring onion, and serve in small lettuce cups.
Revamping Remaining Veg
Veg, meanwhile, can be dressed up and fit for a party with a big batch of fried potato cake. Combine all your remaining vegetables with herbs, then season and add flour. Stamp out portions to about the size of small rounds, then keep in the freezer. Reheat in a hot oven for a few minutes and finish with whatever you like—perhaps roast beef and grated horseradish. A word to the wise, though: set some aside for brunch the next day.
